Semiya (Vermicelli) Kheer with Almond Milk Recipe

Kheer made with semiya, one of my favorite Indian desserts!! Sadly, because of the milk, I stopped eating it after becoming vegan. But not anymore! We replaced the cow's milk with almond milk and it tastes just as great, if not better! And for someone who doesn't have much of a sweet tooth, I love this dish because it delivers just enough sweetness without going overboard. Makes: 4 servings
Cooking: 25-30 minutes
Ingredients
100 grams thin, roasted vermicelli
500 mililiters almond milk
150 grams sugar (we use raw cane sugar)
2 tablespoons sunflower oil
10 whole cashew nuts
25 grams raisins
1 teaspoon cardamom powder
1 pinch saffron
Water
Cooking
1. Light the stove to medium flame and place a frying pan. Add 1 tablespoon of sunflower oil to the pan.
2. Break the cashew nuts into smaller pieces. When the oil heats up, add the cashews to the pan and fry them until light brown.
3. Remove the cashews from the pan, and replace with raisins. Fry them. Then, keep aside the fried cashews and raisins.

4. To the same pan, add another tablespoon of oil and fry the vermicelli for 10 minutes or until crispy on a low-medium flame.

5. In a small pot, pour the almond milk and let it heat up a bit on the stove.
6. Place another medium-size pot on the stove on a medium flame. Add the water and heated almond milk to the pot. Bring to a boil.
6. When boiling, add the roasted vermicelli and cook for 10-15 minutes until the vermicelli becomes soft.
7. Switch off the flame, keeping the pot on the stove. Add sugar, cardamom powder, and saffron. Mix well until the sugar dissolves.

8. Cover the pot with a lid and leave for 10 mins. Garnish with the fried cashews and raisins before serving.
