Almond Milk Mango Lassi Recipe

Despite mango season ending, I thought I'd share a no-dairy alternative for a classic Indian beverage: mango lassi! This time with almond milk (or your choice plant milk) instead of dairy. This is a very easy and quick recipe that can be prepared on whim (provided you've got mangoes of course!) You could also use the canned mango pulp, but I recommend against it since using the whole fruit is much more healthy 😊 No added preservatives and other unnecessary ingredients! I think that's one of the beauties of eating whole-food, plant-based: it makes you appreciate foods much more because sometimes, you can only eat them at certain times of the year.

Ingredients
1 ripe mango 2 cups almond milk (or your choice plant milk) 2 tablespoons agave syrup 1 teaspoon lemon juice 1 teaspoon cardamom powder 3 tablespoons coarsely ground mixture of almonds, cashews, and pistachios
Few strands of saffron
Making
1. Peel the mango and cut it into pieces.

2. Add the mango pieces and the almond milk to a blender. Blend for 30 seconds.

3. Add the lemon juice, agave syrup, cardamom powder, and saffron to the blender and blend again for another 30 seconds. Taste and adjust the sweetness to your liking.
4. Garnish with the nut mixture and serve chilled.
